Apple crumble is one of the must popular dessert ever, and let's face it. It's so delicious. It's a perfect dessert for a family gathering or for that romantic dinner when you want to impress your beloved partner. Whatever that is, the truth is, we don't need any excuse to make this dessert, because it is always a pleasure!


For the apple base

4 green apples peeled, coreless and sliced thin around 5mm thick
80g sugar
1 tea spoon cinnamon powder
30g butter

Directions for the apple base

In a frying pan caramelise the butter and sugar together
Add the apples and cook in low heat till the apple slices are tender
Add the cinnamon and let it cool down
Keep in cooler till serve

For the Crumble

100g sugar
100g butter in room temperature
200g all-purpose flour
1 tea spoon cinnamon powder

Directions for the crumble

Mix all the ingredients together and adjust the quantity of the flour in order to get the right crumble consistence. Keep in a container in room temperature

For the caramel ice-cream

600g heavy cream
100g milk
300g sugar
10 egg yolk
½ tea spoon Xanthan gum

Directions for the ice-cream

Caramelize the sugar in a large pot
When the sugar is caramelized add the cream and let it cook till melt the caramel and reduce about 1/3
Remove from heat and add the milk
In a blender run the egg yolk with low power
While the blender is running with the egg yolk add little by little the mix of caramel.

The caramel is very hot, so need to be add slow in order to not cook the egg yolk
After add everything to a blender, run for 2 min
Transfer the mix to a toll container and add ½ tea spoon of xanthan gum and mix with a hand mixer till the mix get a little ticker as a cream consistence (You need to move the hand mixer up and down in order to activate the xanthan gum)
Transfer to a pacojet container and freeze.
